Tried the Siphon brewing method today at Portola Coffee Lab in Costa Mesa. Invented in the 1830’s, this retro method is the purist’s tool of choice. Lighter in body, it’s strength is flavor extraction. The nuances are highlighted beautifully. The coffee I chose was the Sumatra Blue Batak – Lake Toba. Mild acidity, grapefruit, brown sugar, cedar and faint floral notes. Very clean, full bodied Indonesian brew!
