Another block buster from Santa Rosa brewed by the Russian River Brewing Company, the Redemption Ale is a blond brew fashioned after a Belgian style “single”. Typically “singles” are brewed only at the Trappist Monasteries for the monks to enjoy with meals. They often drink half a bottle with lunch and the rest with supper.
I enjoyed mine in whole over an appetizer of vintage Unie Kaas Gouda before digging into a bowl of whole wheat pasta with beef and a marinara sauce topped with a healthy dose of chili pepper flakes. The ale has a golden color as you can see and a thin white head. It was refreshing with no bitterness and a citrus and spice laden flavor.
Aged for 5 years plus, this cheese is caramelly and crunchy, the result of the formation of salt crystals during the aging process. Seriously, this cheese is a miracle of flavor! Its rich flavor and subtle sweetness is intense and layered. The color is a deep burnt orange with a texture similar to Parmigiano-Reggiano, firm and flaky. It’s an excellent substitute for grating cheeses and caramelizes beautifully.
This pairing was a great match for a Sunday evening supper!
